Simple No-Bake Energy Bites

I was looking for a healthy snack recipe to share at a local event where I was speaking. I couldn’t bring my Vitamix or small food processor and needed a simple recipe. I took a recipe from my Revitalize and Clean-Up Your Diet program and made some adjustments to it and it worked DELICIOUSLY.

These are great for snacking, breakfast on the run, to have after a workout, pack in kids lunch, etc. They are also a delicious replacement for the traditional No-Bake Cookies…… 🙂

Simple No-Bake Energy Bites

Prep Time: 10 minutes  |  Total Time: 10 minutes

Use high quality, organic ingredients where ever possible.

  • 1 cup old-fashioned oatmeal (dry)
  • 2/3 cup coconut flakes (toasted)
  • 1/2 cup peanut butter
  • 1/2 cup ground flaxseed
  • 1/2 cup cacao nibs (or chocolate chips 60% or great cacao)
  • 1/3 cup local good quality honey
  • 1 Tbsp. chia seeds
  • 1 tsp. vanilla extract

Stir all ingredients together in a medium bowl until thoroughly mixed. Cover and let chill in the refrigerator for about half an hour. Once chilled, roll into balls of whatever size you would like. I made some smaller bite size and some about 1″ in diameter. Store in an airtight container. Can keep refrigerated for up 5-7 days.

Change ‘Em Up:

This is a recipe that can easly be modified to suit your tastebuds. Substitutions can be found for just about any ingredients.

Use your favoriate other nut butter like almond butter or sunbutter in place of the peanut butter.

Add in some wheat germ in place flaxseed or mix it 1/2 & 1/2.

Add in other delicious ingredients:

  • chopped dried fruit (apricots, dates, raisins, etc.)
  • dried berries (cranberries, cherries, etc.)
  • chopped almonds, pecans, walnuts, or sunflower seeds
  • other grains (different kinds of oatmeal or even try quinoa)
  • 1 scoop protein powder (my favorite is Nutrimeal Free with a mild vanilla flavor.  Adds 5 more grams of portein plus other important nutritients too)
