Purple Magic Baked Steel Cut Oats

Baked steel cut oats aren’t new but may be my newest favorite way to may breakfast oats. Full of antioxidants, fiber and protein, it’s a great way to start your day.

Baking with the blueberries and cherries turn the oats that beautiful purple color – good for your belly and a delight for your eyes.

Purple Magic Baked Steel Cut Oats

Makes: 6 servings

Ingredients

  • 1 c steel cut oats
  • 1 quart unsweetened vanilla almond milk
  • 1 c frozen cherries
  • 1 c frozen blueberries
  • 2 t cinnamon
  • To serve: extra fresh fruit, if desired

Directions

  1. Preheat oven to 350 degrees.
  2. Mix all ingredients together in a 9″ x 13″ pan. Bake for one hour.
  3. To serve, top with extra fresh fruit, if desired.

Serve right from the oven for a wonderfully belly warming meal. If you let them cool, you can cut the oats into squares for a great on-the-go snack for you and your family.

Cook Once Eat Twice. Make a batch for Sunday morning and also have some left for your busy weekday mornings or to pack in lunches.
