Ever shop at Costco and wonder what to do with those large yellow/green grapefruit looking fruits (pummelo) you see others buying?

 

Beside eating plainly peeled, which after eating one (and they are big), you might not be craving more for a while. Since you get 4 in a bag, here is a really great smoothie that is perfect for this fruit. (Picture above only shows 3 because I made the smoothie and it tasted so good I wanted to share it with you here.)

Pummelos are a great source of dietary fiber (contains approx 6.1 grams); a rich source of potassium (3x more than a medium banana); a good source of folate and very high in vitamin C (1 pummelo contains approx. 600% RDA). The health benefits can’t be questioned.

I added ginger becuase I love the flavor. I also like ginger for its immune-boosting and digestion aiding abilities (ginger can help relieve intestinal gas and speed up digestion).

This smoothie was refreshing and and light. Enjoy!

Pummelo Green Smoothie Recipe

  • 1/2 (or use the whole thing) pummelo, peeled
  • 2 or more cups of fresh baby spinach
  • 1 nub fresh ginger
  • 1 tablespoon chia seeds
  • 10-12 ounces of coconut water

Add the coconut water to your blender then add chia seeds, ginger, spinach and pommelo. Blend on smoothie setting or high for 30 seconds or until the smoothie is creamy. Add ice cubes if you want colder or thicker. (This is really good not being too thick so try it first before adding ice.)

Don’t worry about having some of the white pith still on, it is a great source of fiber and will blend up without adding any flavor.

Serving Size:
I served a glass to my husband and enjoyed one myself because the whole thing would have been too much for me. My husband enjoyed it and he does not drink green smoothies very often so I was happy. You can store leftovers in a sealed container in the refrigerator for up to 24 hours. Fill container to the top.

Medical Note: Pummelos are part of the grapefruit family. If you are on prescription medication, I suggest you consult your doctor or pharmacist before eating them. Like grapefruit, I heard they may interfere with some medications.
