Creamy Mashed Cauliflower
I love Cauliflower for many different reasons and this Creamy Mashed Cauliflower is one of my favorite recipes.
- It is a member of the cruciferous (you know we need to be eating these all the time) and is related to it’s cousin – broccoli. It contains alot good-for-us nutrients, including vitamins, minerals, antioxidants, and other phytochemicals.
- It is rich in a phytonutrient called sulphoraphane which studies show helps to prevent against the development of cancer.
- It is an excellent replacement for (high carb, fat, calories) mashed potatoes!
And there are so many ways to eat it…. raw, steamed, roasted, mashed and even as soup.
Creamy Mashed Cauliflower
Ingredients:
- 8 cups of cauliflower florets (one large head cut)
- 3-4 cloves of chopped or crushed garlic
- 1 teaspoon of extra virgin olive oil
- 1 tablespoon of non-GMO butter or ghee
- sea salt to taste
- ground black pepper to taste
- fresh chives or even cilantro to top off
Preparation:
1. Steam cauliflower until it is very tender.
2. Place all ingredients into a blender or food processor. Blend until you have a creamy consistency.
3. Sprinkle with fresh chives and serve immediately.
