Creamy Cauliflower Sauce
This is a DREAM SAUCE! It is delicious, versatile and you can eat as much as you want!
Plus, it’s Oil-Free, Dairy-free, Egg-free, Gluten-free, Grain-free, Nut-free, Paleo, Soy-free, Sugar-free, Low Glycemic, Vegan/Vegetarian (if you want).
Creamy Cauliflower Sauce
Ingredients
- 1 large head cauliflower (cleaned and cut into florets)
- 2 garlic cloves (or more if you really like garlic flavor)
- 2 cups chicken broth or vegetable broth if you are vegan/vegetarian
- 2 cups water
- 1 teaspoon onion powder
- 1/4 teaspoon freshly ground pepper
- 2 tablespoons of nutritional yeast (optional)
- chopped chives (optional)
- 1/2 teaspoon lemon juice
Instructions
Add cauliflower, garlic and broth to pot. Cover and bring to boil. Reduce heat to simmer and cook for 5-6 minutes or until cauliflower is tender.
Remove cooked cauliflower with a slotted spoon putting it directly into a high speed blender. (Reserve the liquid, we’ll be using some and saving the rest for soup stock)
Add remaining ingredients to the blender with 1/2 cup of the reserved liquid. Blend on high for 30 seconds, or until very smooth. Add more liquid if you want sauce to be thinner.
*I like it a little chunkier too.
Ways to serve
- Add to any recipe that calls for creamed soup.
- Drizzle on vegetables like asparagus, chicken, bean noodles etc.
- Add some pea’s and mix in plain cauliflower rice and top with cilantro.
- Use as pasta sauce with healthy whole grain or grain free pasta. Stir in some spinach first to give it a green punch. Top with some parsley.
- There are endless ways to use this creamy cauliflower sauce, so make some up and enjoy!
