Avocado Egg Salad

Avocado egg salad – who would’ve known the combination of egg, a great protein, and avocado, a healthy fat, is probaly one of the greatest food combination I’ve seen in a long time. When I saw this recipe from I Am Avocado, I was thrilled. I’ve taken it and lightened up the ingredients and made it my own, super yummy sandwich treat.
This is a delicious avocado egg salad to serve on a toasted sprouted grain, wrapped in a lettuce leaf or with some veggie’s (or just a spoon full or two right from the bowl).
For a grain-free sandwich make a delicous lettuce wrap by using a large leaf lettuce like butter, romaine or swiss chard and adding some chopped cucumber, tomato and sprouts for added greens.

{Lighter} Avocado Egg Salad
Servings 2 servings
Ingredients
- 6 eggs
- 1 to 1 1/2 avocado, depending on size
- 1 tbsp lemon (or lime) juice
- 1/2 tsp salt
- 1/4 c. red onion, chopped
- chives to garnish
Hard-boil the eggs and roughly chop. Mash avocado and combine with the other ingredients. Serve with chives on top.
