California Salsa
(A Vitamix Recipe)
- 1 jalapeno, seeded
- 1/2 medium onion, peeled, halved
- 1/4 cup cilantro leaves
- 1 tsp fresh squeezed lemon or lime juice
- 6 ripe Roma tomatoes, quartered
- 1/2 tsp salt
- 1 garlic clove (optional)
Place all ingredients into *Vitamix container and pulse until chopped. Make is as chunky or as blended as you like. Let chill before serving so flavors will blend.
This is great to use in lettuce wraps with guacamole or with tortilla chips.
*If you don’t a Vitamix, just chop everything and add together with lime juice and salt.
