Zucchini, Tomato, Garlic Penne
A delicious and easy meal that you can add more veggies to or even a lean meat or fish like chicken of salmon.
Zucchini, Tomato, Garlic Penne
- 2 cups whole grain penne pasta
- 2 fresh zucchini, cut into 1/2 moons
- 2-4 TBLS EVOO or avocado oil
- 1-2 garlic cloves, minced
- 1 pint cherry tomatoes, cut in 1/2
- fresh basil, cut into strips (i used 5-6 leaves because i love fresh basil)
- fresh grated parmesan (reggiano) or pecorino Romano
- sea salt & cracked pepper to taste
Cut and chop all veggies. Bring large pot of water to boil then add pasta and cook as directed for al dente.
As penne is cooking, in a large skillet, heat the EVOO and sauté garlic for 1-2 minutes. Add zucchini and sauté for an additional 3-4 minutes until light brown. Add tomato and sauté again for another 2 minutes. Season with salt & pepper. Toss in cooked penne, a little grated cheese and basil.
Serve as a side to chicken, salmon or over top a bed of arugula like I did. Add a little more freshly grated cheese to top it off and ENJOY!!!
