Triple C Protein Balls
I love protein balls. They are an an ideal snack because they are packed with protein and good fats plus other healthy, energizing ingredients. I call these the Triple C because they have cacao, cashew and coconut.
Triple C Protein Balls
Ingredients:
4 tbsp. almond butter (or sun or cashew butter)
4 tbsp. cacao powder
2 tbsp coconut oil
1 tbsp. chia or ground flax seed
1 scoop protein (hemp, pea or soy)
1 tbsp shredded coconut
1 tbsp raw honey or agave (or Stevia 6-10 drops or more if you like sweeter)
1 cup crushed cashews (add tbsp of shredded coconut for a bigger coconut flavor)
1/4 tsp of sea salt (optional)
Directions:
Combine all ingredients, except crushed cashews, into a large bowl. Mix together. If necessary, add a tbsp of water at at a time until desired consistency – they should be firm.
Roll the dough into small balls, roll in crushed cashews and put on a cookie sheet. Eat them right away or put in freezer for 10-12 minutes to serve cold. Best stored in refrigerator.
**Great for those sugar cravings, when you need something to give you a little boost, or to hold you over to your meal. Put in little party cups and serve as a sweet party treat both kids and adults will love!!!
