Sweet Potato Chips
Healthy snacks can be easy and delicious. These sweet potato chips can be served with a yummy dip of salsa, hummus, guacamole, or your healthy favorite homemade ranch. They could be topped off with a little drizzled honey, chopped walnuts and blue cheese crumbles or made into sweet potato nachos with black beans, chopped scallions, tomato, chopped arugula, and chopped avocado with a small dollop of sour cream (or not). If you are a cheese eater, you can add a little and then melt in oven before topping with the other ingredients – but not too much because we want to keep them on the healthier side.
Sweet Potato Chips are great for football games, holiday gatherings, or just for you and your family on board game night.
Sweet Potato Chips
- 2 sweet potato, peeled and cut into thin rounds (for extra cripsy, make really thin or for thick chips cut up to ¼ inch )
- 1 TBSP grape seed, avocado or EVOO oil
Preheat oven to 375. Toss potato slices with oil and spread out on parchment lined pan. Bake in a single layer, turning once, until lightly browned and cooked through. Set aside to cool for at least 10 minutes.
If you are making sweet potato nachos, bake sweet potato first, then put cheese on top and bake until melted. Top with remaining ingredients mentioned above. Serve warm.
If you are making a sweeter dessert style, when potatoes are cooled, top with crumbled blue cheese and chopped walnuts then drizzle with warm honey – garnish with parsley or even mint.
