Sweet Basil Spaghetti Squash

A perfect dish for you alone or even Thanksgiving dinner. With a whole lot fewer calories (1 cup = 45 cals), the good carbs, and only .5 fat grams per cup, it is a tasty replacement for any pasta. Spaghetti Squash and Sweet Basil
Prep Time: 10 minutes
Cook Time: 30 minutes
Ingredients:
1 spaghetti squash
3 tomatoes or cherry tomatoes
2 cloves garlic
¼ cup fresh basil (chiffonade)
Pre-heat oven to 400 degrees. Cut spaghetti squash in half and scrape out seeds and discard. Fill a roasting pan with 1 inch of water, and place squash flesh-side down. Roast 45 minutes to an hour, or until inside soft but not mushy. *Be careful not to overcook.
Sauté tomatoes and garlic. Remove from heat. Stir in a little sea salt and pepper.
Using a fork, scrape out the spaghetti squash and put in the bowl, combine all ingredients, stir and serve warm.
Note: This recipe makes enough to serve a 2nd meal – cook once, eat twice is always a smart thing!
