Super Hero’s Super Food Salad
This is going to be your new favorite all year round. Power packed with protein, anti-oxidants, nutrient-dense power foods & super greens, this is a salad for the super hero in you! Add your favorite bean (mine is black) or edamame or your favorite nut (I added cashews) and make it just how you like it. For a heart healthier version, eliminate nuts and eat without oil (see dressing recipe below) or with just a squeeze lemon or lime and some balsamic. This makes a BIG salad that you can share.
The Super Hero’s Super Food Salad
Ingredients
- 1 cup chopped fresh kale
- 1 cup cauliflower rice
- 1 cup chopped purple cabbage
- ½ cup fresh grated carrots
- 3 chopped green onions (include green parts)
- 1 cup fresh blueberries
- ¼ cup sunflower seeds
- ½ cup black beans, cooked (or drained & rinsed if using canned)
- ½ cup tomatoes, chopped.
- ¼ cup cashews (lightly chopped) OPTIONAL
Simple No-Oil Mustard Vinaigrette
- 1/2 cup seasoned rice vinegar or vinegar of choice
- 2 teaspoons Dijon mustard or substitute with your favorite mustard
- 1 garlic clove, crushed
- sea salt and pepper
Whisk ingredients together. Serve on side or pour over salad.

Tip: This salad makes one very large salad or divide and store ½ for lunch or dinner in a cute mason jar the next day. It does well for about 24 hours. If you plan to save some for the next day, add the nuts + seeds and top with the dressing just before serving.
