Smashed Avocado on a Black Bean Burger

Smashed avocado is one of my favorite and easiest go-to snacks or condiments.

An avocado is a SUPERFOOD-SUPERFRUIT like no other.  It is an anti-inflammatory, supports cardio vascular health, promotes blood sugar regulation, and has anti-cancer benefits.

Containing nutrient that nourish both inside and out, avocado’s powerful phytonutrients are undeniable.

+carotenoids (alpha-carotene, beta-carotene, lutein and zeaxanthin to name a few)

+flavonoids

+Oleic acid, ALA/omega-3’s (20g of the average 30g of fat in a avocado are these good fats)

+Folic acid or folate

+Vitamin K

+Vitamin B6

+Vitamin C

+Vitamin B5 (energy producing)

+Potassium (higher than a banana;mucslce health)

+Good dietary Fiber

+Good monosaturated fats

There is so much more to this SuperFood – SuperFruit, so go grab a sack and get to making some easy-peasy delicious health-on-a-spoon (or on a black bean burger as I did)!

SMASHED AVOCADO RECIPE

Use organic ingredients whenever possible.

Ingredients:

1 small or 1/2 large ripe avocado, about 4 tablespoons total

1 pinch natural sea salt

1/2 lemon (substitution: lime)

1/4  to 1/2 tomato

1/4 white onion (substitution: garlic)

Directions

Remove avocado flesh leaving as much of the high nutrient value dark green just under the skin.  Smash in a bowl.  Squeeze in lemon; add onion and tomato and gently mix in.  Scoop on top of a cooked, healthy black bean burger.

For entertaining: Serve in a beautiful bowl with healthy tortilla chips or gluten-free pita.
