I haven’t used my crock pot in some time and I thought it was time to pull it out and start using it again. It is winter in Midwest which means cold weather. Using a crock pot is easy and allows us to make some delicious HOT meals without it taking all evening. You simply prepare everything in the morning and cook it all day long. This is a great tool to help with work-life balance allowing us to do what we want during the day (work or otherwise) and still have a hot, healthy and delicious meal on the table for dinner. The varieties are endless and I have some great recipes to try this winter.

Slow Cooked Turkey Breast in a Crock Pot

  • 1 4-6 lb. turkey breast (I only had two smaller breast in the freezer when I decided to make this.)
  • 1 large onion sliced into three thick slices (pick your favorite flavorful one)
  • 1 24-32 oz of low sodium chicken stock (preferably organic or all natural)
  • Himalayan Pink Salt
  • Pepper
  • Garlic powder and any seasonings you prefer. Don’t be afraid to spice it up. Turkey can sometimes use the extra flavorings.
  • Extra virgin olive oil

Rinse turkey breast and pat dry before doing anything else.

Layer thick cut onion on bottom of crock pot.

Rub turkey breast with olive oil and desired spices. Place on top of onion and pour chicken broth to fill base (don't pour over turkey as it will was spices off).

Put the lid on and start the cooker. If setting in the morning, put on low and cook for 8 hrs. If starting in the afternoon, put on high for 4 hour cooking time. Consult your slow cooker guide too as each are a little different.

Savor the aroma all day long.

You can slice it, shred it or just cut it anyway you wish. It will be so tender will almost fall apart.

Serve with your favorite sides. I served with sweet potato fries and a simple romaine & radish salad. **Don't forget to serve up the onion too - so tender and delicious.

Strain the broth even though turkey has very little fat.

You’ll have a great stock to make soup the next day. Spoon a little over the turkey before serving at dinner and storing the leftovers too.

If you don't eat it all for dinner, you will have some great leftovers for tomorrow.

Lose the weight you don’t want to hold to any longer while learning how, what and why to eat. Look as good as you feel.
