Summer Salad with Avocado Vinaigrette
My mum makes up the best salads! Some she finds in her reading of cookbooks, cooking magazines or watching cooking shows and others she just whips up. This one she made on the 4th of July and we all enjoyed it!
Simple Summer Delight Salad
Ingredients:
- Large head romaine or 2 smaller
- 1 cup black beans (rinsed) (or garbanzo or even 1/2 c of both)
- 1 large orange bell pepper, chopped
- 1 pint of grape or cherry tomato’s (cut in ½)
- 2 cups of corn- fresh or frozen (thawed but not cooked) *see note below
- 5 green onions (green included)
Avocado Vinaigrette Dressing
- 1 cup loose leaf cilantro (chopped)
- ½ avocado
- 2 TBLS lime fresh lime juice
- 1-2 garlic cloves chopped
- ¼ EVOO
- 1 ½ TBS white wine vinegar (or other)
- Salt & Pepper
Puree until smooth in blender or processor. Let set in refrigerator for a fuller infusion of flavors. Serve tossed in salad.
Want to make it a meal? Add a little more protien with some grilled or roasted chicken breast, chicken or turkey sausage or lentils.
NOTE: Most corn is GMO based and it can be hard to find a non-GMO corn – but it is available. I believe in minimizing GMO’s in my diet but sometimes it is challenging. Since I don’t eat a lot of corn or corn products, using regular corn in this was fine with me.
