Make your own almond milk at home – yummy!

Making your own almond milk is so easy and a big plus is that you can personalize the flavor to suit what you like.

To make a basic almond milk, you just need 1 cup almonds (soaked overnight makes about 1 1/2 cups), 3-4 cups of water and a nut milk bag. Mix it in a high speed blender and strain through the nut milk bag and you are done.

To add some variety, add some ingredients to suit your personal taste. When I make almond milk at home, I added cinnamon, vanilla, Madjool dates.  Blended and strained. It was tasty fresh made but I am looking forward to cold almond milk too.

Cinnamon Vanilla Almond Milk

Makes: 3-4 cups

Ingredients:

  • 1 cup raw almonds  (pre-soaked in water overnight)
  • 3-4 cups filtered or PH water
  • 2 pitted Medjool dates
  • 1 tsp vanilla extract (buy a good brand there is a difference) It is really good with whole vanilla bean too.
  • 1/4 tsp cinnamon
  • a pinch sea salt just to enhance and bring out the flavor

Step 1: Rinse and drain the almonds.

Step 2: Put almonds in the blender with dates and vanilla.

Step 3: Blend starting on lowest and going to highest speed (stay on highest for 1 minute or so).

Step 4: Place a nut milk bag over a large bowl and slowly pour the almond milk mixture into the bag.

Step 5: Gently squeeze and massage the bottom of the bag to release the milk. (It took me a few minutes to get all the milk out).

Step 6: Add nut milk back to blender and add flavors – in this case cinnamon and the pinch of sea salt.

For chocolate almond milk, Add 1-3 Tbsp cacao powder and 1-3 Tbsp maple or agave syrup

Step 7: (Restrain if you want) Pour into a glass jar to store in the fridge for up to 3-5 days. (Shake well before using – it can separate when it sits).

Enjoy with your favorite treat or add to your tea. This milk is also delicious with cereal. Use to make your Chia Seed Pudding too.

Make Chocolate Almond Milk

Add in a couple of tablespoons of raw cocoa powder to above recipe for a delicious chocolate-vanilla milk (or omit the vanilla for straight up chocolate).

Use a nut milk bag or cheesecloth or a fine strainer and a spoon.

Save and use the pulp to make almond flour. Put pulp on cookie sheet and dehydrate in the over on low. Use for pancakes, cookies or other recipes that call for almond flour.

Tips:

Homemake almond milk storage: best is a mason jar or other glass container with a lid.
