Key Lime Vegan Dessert Treats
This cool dessert, from the Sanoviv.com newsletter, is simple and does not require baking! Makes 6 servings.
Ingredients
- 1/2 cup raw almonds or other favorite nuts (Brazil nuts, pecans, macadamia nuts)
- 2 tablespoons melted coconut oil
- 1/2 cup raw cashews, soaked in water overnight and drained
- 1/3 cup full-fat organic coconut milk, well shaken
- 3 tablespoons of organic raw honey or organic maple syrup
- 4 limes juiced and zested
Preparation
1. Crush the almonds or place them in a coffee grinder until finely ground and mix in the melted coconut oil until the mixture is crumbly and a bit sticky.
2. Line a muffin tin with six cupcake liners and place one heaping tablespoon in each muffin liner. Press the mixture down using the back of a spoon to make a crust.
3. Place the muffin tin in the freezer for fifteen minutes, while you prepare the filling.
4. In a food processor add the drained cashews, coconut milk, honey, and lime juice. Puree until smooth and transfer to a measuring cup.
5. Remove the muffin tin from the freezer when the crusts have hardened a bit and pour the filling mixture over the crusts.
6. Top with lime zest and place into the freezer for at least five hours.
7. Store in the freezer until ready to serve.
