KISS Kale Salad

This is a KISS or Keep Is Sexy (Kale) Salad from my #30 Day Beach Bum Program program I ran over the summer. You can modify the ingredients to fit what ever is in season.  It is a delicious way to get more super greens into your diet.

KISS Kale + More Salad

  • 1 bunch organic kale
  • goji berries
  • baked potato cut into chunks
  • lentils, rinsed
  • walnuts

Strip kale off of stem and tear into small pieces. Put a little of EVOO on your hands and massage with the pink salt for about a minute to break it down.

Honey Dijon Dressing

  • 2 tbs USANAʼs OptOmega or EVOO (Extra Virgin Olive Oil)
  • 1 tbs dijon mustard
  • 1 tsp of honey (ideally local and raw)
  • A dash of sea salt
  • Fresh lemon juice to taste

In a small bowl, whisk the dressing ingredients together with a fork.

Directions: Toss the kale, baked potato with dressing. Top with lentils and goji berries. Enjoy.

Other salad additions:

  • 1-2 fresh carrots, shredded
  • 1/4 cup raw pumpkin seeds
  • 1/4 cup fruit sweetened organic dried cranberries
  • chopped broccolli
