French onion soup is usually reserved for when you are eating out because it looks and tastes like it takes a chef to make it. The truth is, it’s pretty easy and much healthier for you to make at home. So give it a try and enjoy some homemade healthy french onion soup for dinner tonight.

Never mind the fact that they make most people cry, onions are an great ally in your fight against sickness & disease. Onions have incredible health benefits.

Onions are a very good source of vitamin C, B6, biotin, chromium, calcium and dietary fibre. Plus, they contain good amounts of folic acid and vitamin B1 and K.

Easy, delicious and good for you, it’s time for some good ‘ole amazing french onion soup!

Easy Healthy French Onion Soup Recipe

Ingredients

3-4 yellow or white onions, sliced into half-moons

1-2 tablespoon extra virgin, sesame or avocado oil

1/2 tsp thyme

2 tablespoons of balsamic vinegar

1 teaspoon oil, sesame or olive

4 cups low salt organic beef or chicken broth (make it vegan with vegetable broth)

2 cups of water

sea salt

fresh ground pepper


Directions

  1. In a large soup pot, heat oil over medium heat.
  2. Add the onions, thyme and 1 tsp salt. Don’t worry if onions are filling up the soup pot, they will cook down.
  3. For quick french onion soup, cook uncovered, stirring occasionally, until the onions caramelize and turn nice light golden brown, stirring occassionally. (Take the slow cooking route by turning down heat to medium low. It’ll take twice as long to cook the onions but it will sure smell good.)
  4. Add the balsamic and cook 10 more minutes.
  5. Add the chicken, beef or veggie stock, water, a little more salt and pepper.
  6. Bring to a boil then turn the heat to low and simmer at least 30 minutes.

For the healthiest version, serve it up just like this. To indulge a little, but not while on a detox/cleanse, serve it the traditional way but with a healthy twist. Add soup to oven safe soup bowl. Top it off with toasted sprouted grain bread instead of traditional high fat croutons and melted gruyere or fontina cheese. (Toast bread, add cheese to top and put under broiler for a few minutes until cheese is melted.)

Here’s a question that is often asked. How do you slice onions with minimum tearing?

Martha Stewart has a method I’ve tried and it seems to work. Cut near a flame – whether it be your gas stove or a candle. The gas emmited from the onion seems to be drawn to the flame and not your eyes! Just be careful around the flames.

This is the perfect french onion soup to serve for a luncheon or dinner party, for New Years Eve, when you aren’t feeling good (it warms the soul) and, well, really any night.
