Grandma Macklmen’s Irish Spring Rolls

This is a great recipe for a snack, lunch, or a side dish to a meal like grilled salmon. It is a great meal on the go too. I don’t know Grandma Macklem and I don’t even remember how I found this recipe but it was too good looking to not share (link to original recipe below).

Ingredients:

  • 1 lb. asparagus
  • 3/4 cup fresh mint leaves
  • 3/4 cilantro leaves
  • 1 mango or papaya
  • Fresh ginger, 2-inch piece
  • 1/2 red bell pepper
  • 2 cups fresh bean sprouts
  • 8-inch Vietnamese dried rice paper Spring Roll Wrappers

Directions:

  1. Blanche asparagus until tender.
  2. Peel and julienne mango or papaya and ginger.
  3. Julienne bell pepper.
  4. Mix in a bowl with remaining filling ingredients.
  5. To assemble, fill a large bowl with hot water.
  6. Slip rice paper wrapper into water until pliable, about 1 minute. Place wrapper on cutting board.
  7. In the center, place filling ingredients then roll the wrapper from the bottom up, tightly.
  8. Leaving the ends open.
  9. Set aside and cover with damp towel.
  10. Finish with remaining wrappers.
