Easiest Oven Roasted Broccoli

Most kids don’t sit down to the dinner table and take a bite of broccoli and say “Wow, this is so good.” But after you prepare this, they will.  This tender broccoli, tossed with EVOO, fresh lemon juice, and a touch salt, roasted until nicely browned around the edges (some crispy edges), and then sprinkled lightly (or more) with freshly grated Parmesan Reggiano cheese definitely makes this is broccoli that anyone could love. (I am wishing I made more than I did because it is all gone).

Broccoli is packed with powerful anti-oxidants like quercetin, glutathione, beta carotene, indoles, vitamin C, lutein — is low in calories — and is especially rich in vitamins A, C, K, B6 and E, folic acid, and rich in minerals such as calcium, phosphorus, potassium, magnesium. It is an original superfood we want our whole family to love eating.

Here’s how to make it delicious and tasty.

Easy Oven Roasted Broccoli Recipe

Prep time: 5 minutes

Cook time: 20 minutes

Yield: Serves (me! – just kidding.  1 tray serves 4 but I suggest making two trays, seconds will be wanted) 

Ingredients

  • 1-2 pounds broccoli, cut into florets (cook stems or save for juicing)
  • 3-4 Tbsp EVOO (extra virgin olive oil)
  • Juice from half a lemon
  • Kosher salt
  • 2-3 garlic cloves, minced
  • Freshly ground black pepper
  • 1/4 cup grated Parmesan cheese, or to taste

Directions

1 Preheat the oven to 425°F. In a large bowl toss the broccoli florets, garlic with EVOO and lemon juice until lightly coated. Sprinkle salt over the broccoli and toss again lightly.

2 Arrange the broccoli florets in a single layer on a greased or parchment lined baking sheet. Roast for 16-20 minutes, until cooked and nicely browned.

3 Either put the roasted broccoli back in the bowl and toss with fresh ground black pepper and the grated parmesan cheese or just sprinkle and grate it over the pan.

Notes:

  • The measurements are just a guideline. Add more or less olive oil, lemon juice, salt, pepper, or cheese to taste.
  • Use no cheese if desired and it is still very tasty. I grated very little fresh cheese over top of tray before serving.
  • I served with wild caught salmon but you could have with any fish, chicken or lean meat.

Time and Money Saving Tips:

Of course fresh, organic is always the preferred choice, I always keep frozen organic broccoli (Costco) in my house. It is inexpensive as veggies go (budget friendly) and great for emergency meals (unexpected guests) and in winter when it fresh is more expensive. It still tastes great!

I also have Seeds of Change Organic Brown Rice and Quinoa that I just need to warm up and frozen fresh caught salmon. Both are good for you and tasty too.
