Cinnamon Baked Apples

Chopped apples with sugar in baking dish Heart shaped, old wood

Pumpkin gets all the attention this time of year. And while I love the orange sweetness, I love its seasonal competition, the apple,  and it also deserves a spot in the limelight.

I love apples. Everyday I try and either eat an apple or add to my juice, smoothie or breakfast oats.

While my mother-in-law was alive she always made apple crisp or apple sauce in the fall. We all loved it!

I wanted to find a delicious, healthy, and simple baked apple treat, without the all the sugar.  I took my mother-in-laws applesauce recipe and created easy baked cinnamon apple recipes, which fit all of my cleanse food qualifications—and makes your whole house smell amazing.

Baked Cinnamon Apples

Ingredients:

  • 2-4 apples of your choice (best to use organic since we are keeping the skin on)
  • 1/8 cup (or less) pure local maple syrup
  • 2 Tbsp. coconut oil
  • 1/2 tsp. vanilla extract
  • 2 tsp. ground cinnamon
  • 1/8 tsp. ground cloves
  • 1/4 tsp. salt

Directions:

Preheat oven to 350˚F.

Core and chop apples keeping skin on.

Mix all ingredients together in a large iron skillet over medium heat on the stove. Bring liquid to a boil and keep stirring until the liquid thickens. This happens pretty fast so keep a close watch or it could burn.100_2298

Transfer the mixture into an oven safe dish then to the oven (or keep in skillet if you prefer) and bake for 30 minutes stirring halfway through. Serve warm.

Toppings: You can serve this with crushed cashews or walnuts or even a sprinkling of granola. For an extra treat—with a scoop of ice cream or dollop of coconut whip cream on top.

So, if you’re getting tired of everything pumpkin this fall season, give this baked chopped apple recipe a try.

Enjoy!
