Cucumber Salsa – A Refreshing Summer Salsa Recipe
Did you know cucumbers belong to the same plant family as squash, pumpkin, and watermelon? And that cucumbers are made up of mostly water (95%)? This means eating can help you stay hydrated. Plus, they are filling so they make a great snack that helps keep your weight in check or to have as a snack with almost any weight loss program.
With vitamin K, B vitamins, copper, potassium, vitamin C, and manganese, cucumbers can help you to avoid nutrient deficiencies that are widespread when eating a SAD or Standard American diet.
Cucumbers also contain unique polyphenols and other compounds that may help reduce your risk of chronic diseases and so much more.
This cucumber salsa is a great way to cucumbers
CHUNKY CUCUMBER SALSA
Mix all ingredients below in a bowl, cover and refrigerate a few hours to let flavors infuse – overnight is best. Serve with healthy Beantos tortilla chips or for an even healthier choice, use yellow, orange and red peppers.
- 1 large english or 2 medium cucumbers, peeled, seeded and chopped
- 2 medium tomatoes, chopped
- 1/2 cup chopped green pepper
- 1 small onion, chopped
- 1 garlic clove, minced
- 2 tablespoons lime juice
- 2 teaspoons minced fresh cilantro
- 1 teaspoon minced fresh parsley
- 1/2 teaspoon dill weed
- 1/2 teaspoon pink salt
- 1 jalapeno pepper, seeded and minced (optional – add for a hot bite)
Desire a less chunky version, just add everything to food processor and pulse a couple times.
