Cherry Cashew Coconut Love Bites
I was at the home of a dear friend, Estelle (also one of my Fall Lean & Clean Cleansers) to help her do some food prep and teach a few tips and tricks of healthier eating. We had a ball!!! While we were prepping, we had a recipe for a protein ball but didn’t have all the ingredients. SO we made a new recipe and it turned out delicious!!!
here is the recipe debut…..
Cherry Cashew Coconut Love Bites
1 TBLS sun butter or tahini (or almond or a healthy organic peanut butter)
2 tablespoons coconut oil
2 tablespoons chia seeds
1 teaspoon vanilla
1/2-1 teaspoon cinnamon
1/2 cup chopped dried cherries (we used Trader Joe’s dried Bing Cherries)
1 cup steel cut oats (or rolled will work too)
1/2 cup crushed cashews
1/2 cup shredded coconut
Mix all together except crushed 1/2 of the cashews and 1/2 of the shredded coconut.
Then roll into balls then roll either the remaining crushed cashews or shredded coconut.
Place on waxed or parchment paper on a cookie sheet and stick in freezer for 20-30 minutes.
You can serve right away or transfer to freezer safe dish for future. Or you can store in refrigerator if you want to have for snack or dessert over next few days.
If needed to form into balls, add more oats or give them a protein blast by adding a scoop of protein.
To crush whole cashews, we improvised with a paper towel and rolling pin. It worked great.
