Cauliflower is one of my all time favorites and cauliflower rice makes it so versatile and easy to prepare in so many different ways all year long. Cauliflower has tremendous compounds involved in cancer protection, anti-inflammation, cardiovascular benefits, digestive health, and detoxification support.

2 Easy Ways to Make Cauliflower Rice

This is a great Cook Once – Eat Twice (or more) recipe.

Raw Method:
Rice the cauliflower. Stir in remaining ingredients. Store in refrigerator in an air tight container for serving raw or sautéing.

Stove Top Method:

Rice the cauliflower.
In a saute pan, coat with 2 Tbs. coconut oil (or other oil of choice) and sauté onion until transparent about 4-5 minutes. Add ‘rice’ and sauté another 2-4 minute to desired. Stir in remaining ingredients while in the pan. Serve warm.

Roasting Method:
Place the cauliflower rice in a large bowl. Add 1-2 Tbls melted coconut oil and sea salt to taste. Toss with until the rice is coated with the oil. Spread in a single layer on the baking sheet and roast until tender and beginning to get a few brown spots, about 25 minutes. 

Variations for making Cauliflower Rice (raw & cooked)

  • Lime Cauliflower Rice: juice of a lime + 1 tsp sea salt
  • Spanish Cauliflower Rice: 1 Tbs. red pepper flakes + diced tomatoes + jalapenos + fresh cilantro
  • Black Bean Cauliflower Rice: add black beans Cauliflower_Rice_Beans
  • Curry Cauliflower Rice: 1 Tbs. curry powder seasoning + fresh grated ginger + red chilies + fresh lime juice
  • Fried Cauliflower Rice:  add scrambled egg + 1 Tbs. sesame seeds + fresh grated ginger + 1 Tbs. soy sauce, liquid or coconut aminos)
  • Italian Cauliflower Rice: 1 Tbs. dried oregano + fresh basil + diced sundried tomatoes + diced red onion
  • Greek Cauliflower Rice: 1 Tbs. oregano + 1 Tbs. capers + 1/4 cup diced kalamata olives + 1 Tbs. Dijon mustard + 1 Tbs. apple cider vinegar
  • Herbed Cauliflower Rice: add fresh herbs diced finely such as dill, chives, or basil, oregano, rosemary, etc.

Add chicken, beans, veggies or shrimp and make it an easy one dish meal.
