Baked Eggs in Avocado
This is a definetly a power breakfast (or lunch or dinner actually). If you love avocado and eggs like I do, this Baked Eggs in Avocado recipe is for you.
Avocados also act as “nutrient boosters” by enabling the body to absorb more fat-soluble nutrients (such as alpha-and beta-carotene and lutein) from foods that are eaten with them. Pair them with the complete protien in eggs and some high fiber, whole grains and you have a true breakfast of champions.
Baked Eggs in Avocado
2 Servings (serving size is 1/2 avocado)
Ingredients
- 1 Large, Ripe Avocado
- 2 Eggs
- A handful of fresh chives, chopped finely
- Black Pepper and Sea Salt
- One Lime (optional)
Instructions
- Preheat oven to 400 degrees
- Cut your avocado in half and get rid of the stone. (Skin remains on)
- Crack your eggs into the avocado holes.
- Put your avocado halves into a baking tray and cook in the oven for 10-15 minutes (until the whites are firm or to your liking)
- Season by sprinkling the chives on, squeezing lime juice and adding sea salt and black pepper!
Serving + Optionals
Serve with a slice of high-fiber, whole grain bread (gluten free if desired).
Make it PALEO by adding some crumbled bacon on top.
