    Chicken Greek Salad in a Jar

    Salads in a jar are great for meal prep. Once made, they can store for 3-4 days making meals so easy. And you can make any size you desire from full meal salad (above), to a smaller side salad. The bonus is you can create any type of salad in a jar you desire. Have fun with it.

    This Greek Salad in a Jar is full of protein, good carbs and fiber and healthy fat (in the dressing) making it a delicious, healthy balanced meal. On a busy work-at-home day, it was so easy for me to grab the jar out of the refrigerator and just pour on a plate.

    Top Tips for Best Results: 

    • Use a wide-mouth mason jar, mine is a quart size for a large meal salad.
    • Use a smaller jar for a side salad, non-lettuce salad or fruit salad. You can prep these along with your main course prep.
    • Prep all the ingredients in advance so you can make multiple jars at one time. Ideally, one per day is great. 
    • Prepare enough ingredients for as many jars as you plan to make (make enough protein).
    • The layers don’t have to be exact, but put the hardier ingredients near the bottom. Lettuce is always at the top so it is farther away from the dressing and wet ingredients and will stay fresh longer. 
    • Get creative and have fun. Change up your salads for the seasons. In the winter, I like hardier salads. In the summer, I like salads that add some fruit in with the veggies, like oranges, blueberries or strawberries, when they are nice and sweet. 

    Chicken Greek Salad in a Jar Recipe

    Ingredients

    • 1 chicken breast (approx. 4 oz), cooked and chopped
    • 1 cucumber (I used 2 mini’s), chopped or sliced
    • 1-2 tbsp feta
    • Kalamata olives (optional, I don’t like olives so I did not add)
    • 1/4 red onion, sliced
    • 1 cup cherry tomatoes
    • Romaine (or greens of choice), chopped how you like it

    Greek Dressing

    This makes multiple servings and you can store in a cute small mason jar too.

    • 1/3 cup red wine vinegar
    • 1 lemon, juiced
    • 1 tsp Dijon mustard
    • 2 garlic gloves, minced
    • 1/2 tsp dried oregano
    • 1/4 tsp salt
    • 1/4 tsp black pepper
    • 1/2 cup olive oil

    Whisk everything together, slowly adding in the olive oil while whisking.
